Before Gordon's Arrival

Fleming was once a popular Danish restaurant in Miami, but since it was taken over by Andy and Suzanne, business has fallen off. Andy doesn't know much about Danish cuisine, and neither does the chef, Orlando, who is Cuban. The customer base is aging. Andy and Suzanne are racking up debt quickly.

First Impressions

Gordon arrives expecting Danish owners, and even brings a book of Danish phrases. Andy and Suzanne reveal that they are not Danish, nor is their chef. They reveal that the previous owner was Danish. Gordon questions what is Danish about the restaurant and makes fun of their dessert display. Andy says he's changed as little as possible from the previous owner.

First Dinner Service

Gordon goes to the kitchen to meet Orlando, and asks why everything is so bland. Andy tries to take the blame for not changing anything. Gordon tells him he's nostalgic for something that stopped working long ago. The dinner service begins. People know Gordon is there, and so the place is full. Orlando and the kitchen push food out fast, but the customers aren't enjoying their food. Andy and Orlando take it all hard, and with humility, but it doesn't help much. Gordon decides to inspect the kitchen. He finds cross-contamination. Gordon shuts down all orders for duck, and even goes so far as to snatch it off already served plates. Gordon says he will leave if they don't shut the kitchen down immediately. Gordon sits Suzanne down outside to talk. He wants to know why Andy is so laid-back.

Gordon sums up that he doesn't like his chances.

Remainder of the Visit

Gordon hits the streets to talk to the locals. People know of it well, but the reputation is that it went downhill under new ownership. Gordon sits the staff down and asks them what is wrong with Fleming. Orlando thinks they need a new menu. Crystal tells Andy he's afraid of failure. Suzanne also says Andy is afraid of change. Andy admits he's afraid to lose what little he has. Andy does agree to change with Gordon. Gordon decides to remove the Danish cuisine and wants to see what Orlando can do when not restricted by genre. Orlando makes a seared tuna, and the staff loves it.

Restaurant & Menu Remodel

Gordon's design team dramatically changes the interior. The antiquated decor is gone, the walls painted from pink to white. Everyone approves of the new decor. Gordon also has an event to drum up business, a fashion show. He even has Andy participate, and he comes out with a new haircut and clean-shaven. Gordon redesigns the menu, completely removing the Danish aspects of it, more suited to Orlando's skill set, and Miami in general.

Final Service

Andy is motivated ahead of the final service. Daequan Cook of the Miami Heat is among the guests. The kitchen starts by making stupid mistakes, such as making a Caesar salad with carrots. The main courses do better, but then the equipment starts to malfunction. When Orlando relights the pilot light, a fire breaks out. Gordon runs back into the kitchen, puts the fire out himself, and relights the pilot light. The kitchen gets back on track, and once again, the new menu is a hit with the customers. Overall, the relaunch is a success. Gordon announces that he's bought them new kitchen equipment. Orlando is excited about the prospect of working with state-of-the-art equipment. Gordon praises the entire staff and challenges Andy and Suzanne to take the opportunity.

After Gordon's Departure

Fleming did not last much longer and closed in 2010. The space is now occupied by a gym.
